She writes: “I don’t know about you, but I have a SERIOUS weakness when it comes to french fries! I never order them out, but I ALWAYS steal them off my husbands plate (I pretend the calories don’t count that way). My favorite kind of fries are carnival fries…the ones that come in a cup and you pour vinegar and ketchup over top of them…yep, the REAL greasy ones that are just NO good for me!

I have found a way to give into my taste buds AND be nice to my body all at the same time..This is such an easy recipe for oven baked fries. It cuts out the “frying” and doesn’t give you that heavy “I just ate something I shouldn’t have” feeling. My entire family LOVES these!!!” 
(If you don’t have a slicer, it is okay…I have cut potatoes for years using just a sharp knife)
 The slicer I use is the professional multi-chopper @ Williams Sonoma http://www.williams-sonoma.com I received it as a gift, but it is priced reasonably-I use it every day!)
Slice 5-6 baking potatoes like so..

Lay out fries on a baking sheet- if your baking sheets are small, you may need to disperse them on 2 sheets 
Drizzle with olive oil
Sprinkle with Sea Salt (or regular table salt) 
Bake at 425 for 45 mins (flipping every so often)
MMMM!!!! A great side to casual week day dinner
(We had these tonight with turkey and swiss ciabatta sandwiches!) 
Oven Baked French Fries
4-5 baking potatoes
2 Tbsp olive oil

2 tsp sea salt (or table salt)
Pre-heat oven to 425. Wash and dry potatoes and slice lengthwise into strips. Lay out sliced potatoes on  a baking rack. Drizzle with oil and sprinkle with salt. Bake in oven for 45 mins, flipping fries half way through. Serve with ketchup! MMMmm!

  2. Oven fries are pesky creatures to get crisp without overcooking them. I've found that if I rinse them after slicing and then paper-towel-dry them really well, and then add the salt and let sit in a covered bowl for about 1/2 hour or so, and then towel dry them again to get rid of a bit of the moisture the salt draws out, and THEN add the oil and roast… you'll get a crispier outer and a nice, fluffy inner every time.
    I think I've got way too much time on my hands :o) LOL!

  3. I make these a lot! My kids like them ALMOST as much as I do! 🙂
    To cut down on the oil, I put one Tablespoon or two of olive oil in a large tupperware bowl with a tight lid and shake the fries until lightly coated with oil.

  4. Mmmm…I've never made fries because of staying away from fried foods. I figured we get enough when out. I really like the fact that these are baked. My husband will be happy. 🙂

  6. Okay, I just finished writing out my menu for the coming week. I had "hillbilly hotdogs" on the menu (not my name for them, lol). I literally never serve hot dogs, but since there are great coupon match-up sales going on at the moment, I'm "treating" them. I thought about fries for a side, but didn't want to buy frozen. I'm giving these a try, Janelle.

  10. I'm looking to purchase a slicer/chopper and was wondering…. you said you use yours everyday. What else do you use your chopper for? Also, i've never tried carnival fries before and these sound so good. Do you put vinegar on yours at home?

  11. These sound great! I, too, LOVE french fries. And I always need a use for the extra potatoes I have on hand when I make baked potatoes. (My husband doesn't like them and I don't want to eat a whole bag by myself). I do freeze them sometimes, but think next time I'll treat myself to these fries!

  12. Your suggestions are music to my ears!!! Love em!!!! @Anon- I use my chopper for so many things-there are different cutting boards I set inside of it. I dice onions, peppers, celery…etc. I also core and slice apples. You name it..it is great. It is not the "chef" thing to do..but it's quick, easy, and safe! Cleanup is fast too. Now that you mention it, I don't think I did use vinegar on my fries at home! lol! But, I love vinegar on them! I am also a huge ketchup fan. 😉 Hope you are all enjoying your weekend.   13. LOL! I do the same thing. I never order fries, but will steal them from my hubby and/or kids. 🙂 They are like “Mom, why didn’t you just order some?” Those were my huge craving, when I was pregnant, too – McDonald’s fries. I love to do up the baked fries now with a variety of seasonings. I haven’t ever had my fries with vinegar before. Is it malt vinegar or just regular? I know my hubby loves the vinegar and salt chips.
