Are you thinking of firing up your grill for the 4th of July? Then we have some great grill recipes for you today! First – Janelle from Comfy in the Kitchen has the perfect summer meal: NY Strip Steak with onions, Corn on the Cob, Smashed Potatoes, and Watermelon. Mmmmm this makes my mouth water!
I purchased the NY Strips from a local butcher. Can’t you see the difference? These steaks have slight marbling, but mainly the fat is on the outside-which cooks and adds flavor and and makes the steaks nice n juicy! Take your steaks out of the refrigerator for about 20 mins before grilling.
I keep it simple with steak- fresh ground pepper, garlic powder, and seasoned salt.
Heat grill to med-high heat. Place the steak on the grill, wait 2 mins and turn the steaks slightly to give that nice criss cross pattern. Cook for another 5 mins. Then, turn over and repeat. 7 mins a side will get you medium for a thick steak. Take off grill with tongs and let sit for a couple mins to let the juices soak through.
Corn on the cob- I purchased this sweet corn at a local farm. YUM! Look for a multi-colored corn (white and yellow) All you do is husk it, place it in a pot of cool water, turn on the heat- when it boils the corn is done! Butter and salt!
I also sliced and sauteed onions in a pan with butter, salt and pepper. The only thing that would make this dinner better for my hubby is adding sauteed mushrooms- I love him, but I have yet to make these because I just.don’t.like.mushrooms.
- 4 NY Strips (butcher preferred)
- Seasoned Salt
- Pepper
- Garlic Powder
- 1 Onion sliced (optional)
- Mushrooms (very optional)
- 2 Tbsp butter for sauteing
- Take steaks out of refrigerator for 20 mins
- Grease and heat grill to med-high heat
- Place steaks on grill for 2 mins and turn sideways, cook for 5 mins longer
- Flip over and repeat
- Take off of grill with tongs and let sit for 5 mins
- While steak is sitting, heat a pan with butter and add onions/mushrooms. Salt/pepper. Takes 5 min
Quick and Easy Kielbasa
This is a meal that I make when I don’t have something “planned”. Good “ole faithful” Kielbasa. Every member in the family loves it. It’s easy. It’s quick. It works.
Kielbasa stays well in your refrigerator because it comes “vacuumed packed”. This is so nice because it can be a “back up” plan at anytime! I never fail to pick this product up when I’m at the store. I tend to lean towards Hillshire Farms or Healthy Choice brands. They are very tasty and come in “low fat” varieties.
This isn’t my most “showy” recipes- but sometimes quick, easy and tasty are the most important necessities of a weekday meal.
I simply sliced the Kielbasa with 1 vidalia onion (you can also do peppers if you wish). Put them in a grill skillet (you can also do this on the stove in a pan). I grilled them on med-high heat for about 8 mins. Remember, the sausage is already cooked. The grilling technique gives it a nice, smokey flavor. Don’t have a grilling pan? I strongly encourage you to get one! They are wonderful. Mine was $10 at Kitchen Collection in the mall.
Can you almost smell the smokey flavor? It’s goooood.
I served this with a dollup of spicy mustard on the side for dipping. I also added a simple tossed salad, chicken stock noodles (egg noodles simmered in chicken stock for 30 mins, and sliced watermelon. This dinner took me about 30 mins.
- 1 package of Hillshire Farms Kielbasa
- 1 Onion
- Seasoned Salt
- Pepper
- Slice Kielbasa into angled coins
- Slice Onion
- Place in grill skillet
- season with seasoned salt and pepper
- (no oil needed due to the sausage having natural fat)
- Grille on med-high heat for appx 8 mins or until done
Easy Marinated Grilled Shrimp
This is such an easy recipe to make with a huge “wow” factor. Keep your eyes open for seafood sales at your local grocery store! You are going to love this one.
Marinate 1 lb of shrimp per person in butter, olive oil, fresh garlic, orange juice, and lemon pepper. Place in the refrigerator for approximately 30 mins. It is typical for the marinade to harden while in the refrigerator.
Place shrimp in a grill skillet and toss back and forth by shaking the skillet until shrimp is cooked {be careful of flames}.This takes approximately 5 mins. Season with Old Bay seasoning. Serve hot of the grill!
Delicious citrusy, buttery, garlicy shimp – What seafood lover could resist?!
Easy Marinated Grill Shrimp
- 6 lbs shrimp- raw, deveined, tails off. {do not get already cooked}
- 1/2 cup melted butter
- 1/4 cup olive oil
- 1 cup orange juice
- 6 cloves fresh garlic minced
- 1 tsp lemon pepper
- Old Bay seasoning
- Whisk together melted butter, olive oil, orange juice, garlic and lemon pepper.
- Add shrimp and place in refrigerator for 30 mins.
- Heat grill to medium-high heat.
- Place marinated shrimp in grill skillet and toss constantly for 5 mins until done.
- Season with Old Bay.
