Crock Pot Creamy Bacon Chicken

Janelle from Comfy in the Kitchen  is back with a quick and comfy dinner recipe for us!

Janelle writes:  I just love using my Crock Pot. Mmm…the smell of bacon gets me every time.

I typically tend to shy away from slow cooking chicken …but the fat from the bacon prevents the chicken from becoming dry. Serve “gravy” over mashed potatoes or rice and you have yourself one easy, delicious, “comfy food” meal.

Place 6 slices of center cut bacon in a pan and cook 3/4 of the way so it’s still pliable enough to wrap around chicken. Lay 2 paper towels on a plate and place bacon on top to cool and drain. Leave bacon renderings in pan.

Add 2 cans of cream of chicken soup and 1 cup of sour cream to bacon renderings in pan and stir. If you don’t like cream of chicken soup or are gluten free {hand raised!} use 1 1/4 cup heavy cream and 1 1/4 cup chicken broth.

Wrap chicken breasts in bacon and place in Crock Pot. I recommend buying organic chicken because it’s so much more tender…you can probably see that it’s smaller in size and not beefed up on hormones ;)

Pour gravy mixture over top of chicken. Slow cook for 6 hours.

Creamy Bacon Crock Pot Chicken

Serves: 6
Ingredients
  • 6 chicken breasts
  • 6 slices center cut bacon {renders just enough fat}
  • 2 cans cream of chicken soup
  • 1 cup sour cream
  • **** Gluten Free Option**** substitute 1½ cups chicken broth with 1½ cups heavy cream for cream of chicken soup.
Instructions
  1. Fry bacon in a pan ¾ of the way so that it’s still pliable. Drain on paper towel lined plate.
  2. Add cream of chicken soup and sour cream into bacon pan {in the renderings} and mix.
  3. Wrap chicken with bacon and place in slow cooker.
  4. Add gravy over top, cover and cook for 6 hours.
  5. Serve over rice or mashed potatoes.

  3. If you don’t fry the bacon, do you just add the soup and sour cream to the crockpot ? I usually avoid frying bacon (hate the messy clean up!) but wanted to be sure you could skip that step without messing up the recipe!

    1. Linda – I just wrap the bacon raw around the chicken, put it in the crock pot and then put the other ingredients on top of it. I would imagine that the presentation is nicer with the bacon pre-cooked {which is why Janelle takes pics of her recipes for us – this girl is good 🙂 } …but skipping the step is faster and the bacon just cooks with the chicken.

      1. I would guess that this is on low…I looked in my crock pot cook book and it appears that 6 chicken breasts can be fully cooked by cooking it 6-8 hours on low (or high 3 hours).

  6. This is great! I have taken this to many potlucks and people love it. We also wrap the chicken in dried beef slices and then wrap the bacon around that. Either way, it’s great!

  9. Hi there! Quick question (and forgive me if I missed the answer): Are these chicken breasts cut into smaller pieces? I’m picturing an entire boneless/skinless chicken breast half with only one piece of bacon wrapped around it… doesn’t seem like enough (the probability that I have too much love for bacon is the issue lol). The photo looks to me like the chicken breasts are cut into smaller pieces, I’m just not clear.

  10. This is really good. Made it for kids in their 20′ s and they loved it… it’s an old recipe that I used to make in the day with chipped beef rolled in side the chicken. thanks for sharing.
