Breakfast Hot-Pockets

This summer Janelle, from Comfy in the Kitchen, and I stayed at a hotel where they served these breakfast hot-pockets and wouldn’t you know it – this comfy cook went looking for a recipe to make these at home.  These.are.awesome!

Mmmm…these breakfast pockets are absolutely delicious. My children LOVE them. Best yet, you can eat them piping hot out of the oven, then freeze the rest overs to bake in the oven for a later time. Enjoy!

Place 8 frozen Rhodes large dinner rolls in a prepared 9×13 pan. Spray the tops with Pam and cover with plastic wrap. Let rise for 4-6 hours until frozen dough looks like so…

Start making your filing…I chose cheese, eggs and bacon. You can put anything you like in these little pockets- eggs, ham and swiss…veggies, anything goes!

For 8 pockets I used 4 eggs to scramble. I simply add 1 Tbsp of water, whisk together with a whisk or fork.

Add 1 Tbsp of butter to a pan, on med/high heat scrape continuously with a plastic spatula until they are done. Add some salt and pepper as desired.

Fry 8 slices of bacon and let drain on paper towels. Crumble.

Take a roll and on a floured surface roll out as far as it will go in a circle.

Add your cheese, eggs and bacon. Any other ingredients are a bonus ;)

Brush with butter and place on a baking sheet. Bake in a 350 oven for appx 20 mins or until lightly golden in color.

Serve hot out of the oven with some fresh berries

Mmmmm… I do love Rhodes dough, the aroma of it is ahhhhmazing. The mix of the hot bread, gooey cheese and savory bacon and eggs make this a winner for the entire family. We’ve even had these for dinner!

Again- freeze the leftovers individually for a quick/on the go breakfast! 

Homemade Breakfast Hot-Pockets

Ingredients
  • 8 Rhodes frozen large dinner rolls
  • 4 eggs
  • 1 Tbsp water
  • 1 Tbsp butter
  • salt/pepper
  • 1½ cup freshly shredded cheddar cheese
  • 8 slices of bacon; cooked and crumbled
  • Butter for brushing
  1. Place 8 frozen rolls in a prepared 9×13 pan, spray tops of rolls with Pam and cover with plastic wrap, let rise for 4-6 hours.
  2. Pre-heat oven to 350 when dough is done rising.
  3. Scramble eggs with water. Add butter to skillet, scramble eggs- add salt and pepper as desired. Set aside.
  4. Roll out each dough ball onto a floured surface into a circle.
  5. Add fillings: eggs, crumbled bacon, cheese.
  6. Make into individual pockets by closing up all sides.
  7. Place each one on a baking sheet and brush with butter.
  8. Bake for appx 20 mins or until lightly browned.

  1. Bread rolls are so easy to make from scratch- why not spend that little bit of extra time making them? It saddens me how much young women have lost their cooking skills – even Christ followers.

    1. OH I love Janelle’s recipes – she is such a HUGE blessing to this mama! I am so grateful for all the time she takes to actually take photos AS she is making her food and then generously shares these with us. There are TONS of websites out there where you can find how to make these rolls from scratch but this is a place where we share doable recipes for mamas like me who are not so great in the kitchen. lol!

      Let’s be sad over lost souls, the divorce rate, porn epidemic in our country, the abuse of children, and all the other truly dark and evil things happening in our world. And bless sweet Janelle for her time (I would guess this blog post took her about 2 hours to do from beginning to end). Sometimes we forget how our words may hurt the creator of the content. I know this from experience. 🙁

And to all the other wonderful folks out there it says freeze the leftovers so I will be making and baking a ton of these after trying them out on my son. Since they will be precooked they will only need a few minutes in the microwave! I’ll let you know how it goes. Love, Holly

      3. It seems you just rebuked (and diminished) Ellie’s comment, by choosing to mention ” more important issues”, and there was no need for you to do so! There’s nothing less, or more, spiritual about taking a shortcut. However, for many women, budgeting and health are important issues, too. Some may be able to stay home and actually raise their OWN children, because of such decisions — and they still even care about all those other things you mentioned!

    2. Look so yummy! I think my early early rising hubby would love to have these made up in the fridge and freezer! It’s ok to use frozen dough. Even my “make everything from scratch conservative amish-mennonite mother in law” uses frozen bread dough for her pizza. Why? Because she likes it better than hers!

  2. If you freeze the extra, do you freeze before or after cooking? Would love to make a double batch and freeze extra.

    1. I am wondering also about the freezing part. Do you bake, then freeze? Or freeze raw filled pockets and then thaw, rise, and bake?

  3. I’m sure this will be a hit with my family as well. I wonder if I can buy the Rhodes Bread Rolls here in Canada. I’ve never seen or noticed them in the store. I hope so, they sound delicious! 🙂

    1. Michelle, I think you can buy the bread rolls here in Canada. Maybe not Rhodes, but another brand. A friend of mine made ‘monkey bread’ from frozen dough bought at the store and we live in Grande Prairie, Alberta. If it can be found here, I think it should be available elsewhere. I just don’t know the name brand or the store she got it at.

    1. Kristy- Yes, you can find the dinner rolls in the freezer section with other breads and you do let them sit out to thaw. They rise as they thaw!

  4. This looks terrific ! The idea to use the Rhodes dough is terrific ! With all the prep time for the other items definitely makes it manageable . Using home prepared items is so much more appealing than preservative loaded store alternatives for sure ! wonder how this recipe could work with some ricotta cheese and pepperoni and mozzarella .. this opens up a lot of ideas ! thanks so much for the pictures and detailed steps.

  5. These sound delicious!!!! I get hung up on the details though; how do you prepare them from frozen? Do you bake like above, freeze them then stick them in the microwave or freeze before baking, and if so do you thaw first or put them in the oven frozen? I’m fulling planning to make these tomorrow!!

  6. These sound like a winner! Using store bought frozen bread dough doesn’t mean your a bad mom or cook! I learned how to make homemade bread the old fashioned way from my mom, but I still buy frozen dough sometimes for the convenience of it. My mom also taught me how to make homemade noodles, but I still buy frozen egg noodles a lot just because as a homeschool mom/ farm wife I don’t always have the time to do it from scratch. I appreciate all the great recipes that are shared on this blog & hope you keep them coming! God Bless your ministry. 🙂
