Chicken Salad with Grapes and Pecans

 

My favorite recipe blogger, Janelle from Comfy in the Kitchen,  is here with a GREAT Chicken Salad Recipe!  Check it out!!  She writes:

Oooooo Ladies, we love a good Chicken Salad, don’t we?! It is just such a treat when this dish is served. Why? Because typically it takes a bit of time to make, is expensive, and yes…most times is deeeelicious (if you have a good recipe of course). Because this recipe calls for an already roasted chicken (which at my store is $5), it reduces the time and price it takes to make this delicious salad! Sound good? It is… The mixture of sour cream, mayo and Marzetti’s Slaw Dressing makes the texture lighter, the grapes add sweetness and the nuts add a crunch. A mixture of utter yumminess.  Feel free to be adventurous with your sweet/savory items and different ways to add texture. Beware, make this just once, and everyone will ask you how to make “That” Chicken Salad!!!! Enjoy!

Chicken, pecans, celery, onion, mayo, sour cream, grapes, Marzetti Slaw mix.

Pound Pecan Halves

Slice grapes

Dice Celery

Dice Onions

Place it all in a bowl.

Slice white meat off of chicken (you may add the dark meat if you like!)

Cut into bite sized chunks

I typically save the legs for the children for lunch the next day.

Add all wet ingredients.

Mix well

And serve! (This chicken salad wishes it was on a croissant, but I didn’t have one! lol still YUMMY!)

“That” Chicken Salad

1 Roaster Chicken
1 cup quartered grapes
1 cup diced celery
1/2 cup diced onion
1/2 cup chopped pecans
1 1/2 cups mayonnaise
2/3 cup Marzetti’s Slaw Dressing
2/3 cup sour cream

(you may change fruit to apples, pineapples, or red grapes. You also may use water chestnuts and Chinese noodles in place of nuts)

Pull chicken off of breast and dice. Add all other ingredients and mix well. Serve on lettuce, croissants, or bread…also very pretty in phyllo cups!

Just 2… & WLWW Link-Up Party!

Me, My Fabulous Mom!, My Mom's Mom, the oldest sis, the middle sis

Sometimes I wonder, what difference can I make with only 2 children.  If I had 10, what a powerful legacy I would have…but two…I only have two.  And Sunday I teared up as I talked to my mom about those two empty chairs at our kitchen table…and that spare bedroom that would be perfect for a 3rd child, and those two sets of bunk beds in each room that would be perfect for baby #4 and #5…but all I have is 2.

As I drove away teary eyed from our discussion - with longings in my heart unfulfilled…God brought to mind the lives my mom has touched through… just 3.

3 daugthers who walk with the King.

The oldest sister has had a revolving door of children through her home for two decades.  Just this past Sunday I walked past the bus of children our church brings from the inner city – the children were waving their hands out the windows and shouting “Hiiiiiiii Courtney” and I waved back to the children AND to my sister. She has ridden this bus faithfully every Sunday for nearly a decade…so many lives have been touched by just one daughter willing to sacrifice her Sunday mornings to make these children breakfast, go to their homes, meet their parents, and give out an endless supply of hugs, gum and Jesus’ love.

Then there’s my other sister.  For years on Fridays, I faithfully see her invitation pop up on Facebook - “come to our house for fellowship tonight!”  And a dozen young married couples and a score of children arrive to read God’s word and enjoy an evening together in the hospitality of her home.

And then…there’s the little one…who’s all grown up now…with just those 2 children…who longs for more but knows she should be content.  She has an on-line ministry that touches so many – why does that not fill that void?

I reflect on my mother…just 3…

I reflect on my own home…just 2…

Just 3… her 3 have gone on to touch so many more lives simply because she was faithful to pour into us girls God’s word, God’s love, God’s grace, God’s unconditional love and God’s truth.  She clipped coupons, never ordered a drink at a restaurant, shopped the sale racks and sacrificed an immense amount of time to be with her girls at home.

And I wonder…can I do the same with just 2?  I know this chapter of my life has not closed yet and God may have #3 waiting for me as a surprise…but if he doesn’t…I must learn to be content with …just 2.

As I drove in the car with tears streaming down my face - I wrestled…I wrestled with how to deal with the emotions that helplessly wash over me from time to time about…just 2.  And then suddenly I breathed…I pondered the truth that my mom had…just 3.  God comforted me with a remembrance of how he has worked in the generation before me…I am my mom’s legacy…just a little one of 3.  I can trust that God will use my…just 2 for his glory.

Mom – you are one in a million and I’m SO thankful for you.  Thank you for our “little talk” on Sunday night.  Thank you for reminding me that God is in the details, I have…just 2… for a reason.  I must learn to trust and be glad.

I love you Mom – You are a Gift!  Happy Early Mother’s Day!!!
