Baked Egg Casserole
Today’s recipe is a favorite of mine. If you have a baby, this is the meal I am bringing (or my Hawaiian Meatloaf). I like to bring it along with fruit salad and muffins. It’s so simple because you prepare it the night before and then can cook it in the morning and voila – you have a meal!
Baked Egg Casserole Ingredients:
6 slices of buttered white bread
1 lb. fully cooked bacon
2 cups shredded cheddar cheese
1 cup of milk
1 dozen eggs
Place the 6 slices of buttered bread in a 9×13 pan. Then sprinkle the cheese over the bread. Break up the bacon and spread it over the cheese.
In a bowl beat the eggs and milk. Then pour it over the bacon. Put it into the fridge overnight. In the morning bake it in a 350 degree oven for 35-45 minutes or until it doesn’t jiggle.

Courtney, this sounds super! A couple questions – when you take it to people, do you cook it first and deliver it hot? Also, if I took it to a brunch, how long would it stay warm or is it better served ASAP? I'm NOT a cook, so I always have QUESTIONS!!! Thanks!
Dear Anonymous – yes, I cook the casserole before I deliver it. I have a little carrier that keeps it warm. But if you don't have a carrier. Cover the 9×13 with foil and wrap it in a bath towel. That should keep it warm until it's ready to be served!

just discovered this, looks simple and delicious. Just wondering if you have to let it sit in the fridge overnight or if it’s ok to make right away? Also wondering if you’ve ever tried freezing it baked or unbaked to throw in the oven later?
