Baked Potato Soup

Ahhh…the smell of this soup will warmly greet your family at the door. There is something that is just so comforting about a bowl full of potato soup! I promise, this recipe will not disappoint you!
Ingredients

“prep work”- start chopping onions

Put aside in bowl your chopped onions, celery, and carrots

Fry your bacon on med/high heat until cooked through

Place bacon on plate covered with a paper towel to drain

Saute vegetables in the left over bacon grease- this will give the soup a nice bacon flavor

Peel potatoes- this takes only 5-8 mins

Let vegetables saute for about 5 mins until softened

cut potatoes

Add flour to the sauteed vegetables and wisk together to make a pasty consistency

Whisk in chicken broth

Add milk

Bring to a boil on stove. Reduce heat and simmer until potatoes are tender (about 20 mins)

Add cheddar cheese

Stir in cheese

For garnish, I recommend adding a touch of shredded cheese, chopped green onions and bacon. Salt and pepper as desired.

Recipe -Baked Potato Soup

½ lb bacon

½ cup chopped celery

½ cup chopped carrot

½ cup chopped onion

3 tbsp all purpose flour

2 cups canned chicken broth

2 cups milk

10-12 russet potatoes peeled and diced

1 cup shredded sharp cheddar cheese

Garnish- chopped green onions, additional cheese and crumbled bacon. Fry bacon in a skillet, place on paper towel to drain and preserve 2 tbsp of bacon grease in skillet. Add celery, carrot, and onion and sauté until they soften (5 mins). Add flour and stir. Whisk in broth and milk. Add potatoes and bring to a boil. Reduce heat and simmer until potatoes are tender, about 20 mins. Add cheese and stir. Season as desired with salt and pepper. Add garnish as desired.

  5. We're mainly vegetarian here (about 90%). This recipe is the perfect "rare meat" recipe for us. LOVE the flavor of bacon. Will use half the bacon in this recipe and save the other half for my yummy breakfast casserole (which we eat for dinner with fresh fruit and yogurt topped with some ground flax seed). My next week's meal planning just got easier. 😉 THANKS!

  7. Hi Ladies! So glad you like the recipe! I made this a couple of weeks ago and am wishing I had a bowl right now!!! Graciously Y- You can certainly make this in a pot if you don't have a skillet that is deep/wide enough…simply saute the veggies at the bottom of the pot and add the rest!   10. Oh YUM!!! That looks so good. And it reminds me of bean soup, which is one of my favorite. I think it's made almost the same way, except that you add a lot of yellow beans to it. Man, I'm hungry for that soup now.

    This recipe looks wonderful! I am vegetarian so I'll make it without the bacon and see how it turns out!

    I do have a question- what is the tool you used to dice the veggies so perfectly? I use this thing called a Vidalia Chop which I love, but I don't know what to replace it with if it breaks! 🙂

  13. Hi Laura! I use an "Alligator" ! It is a simple 2 part mechanism that is easy to use and clean. I am on the look out for a slicer…if you find a good one let me know!

  14. I made the soup yesterday for dinner. My husband loved it. I didn't have any celery or chives on hand and I only had 7 redskin potatoes, but it still tasted great! It made enough for a bowl for me, two bowls for my husband and one ladle full each for four of my young children.(they are not big eaters!)My husband said he would like it with more broth so next time I'm going to double the milk and chicken broth!   15. Looks delish! I must ask – what gadget did you use to chop the onion? I've been doing it the old fashioned way for years…am I missing out on something? 🙂
    I saw that you commented about learning to sew. I've been doing it for years and I love it. You should take a beginners class at JoAnn Fabrics. It's not hard – it just takes some practice to get going.

    I use something called an "alligator" it is a very easy and useful gadget!
    My sweet husband bought me a sewing machine from Jo-anns and lessons came with it..I went to 1 lesson. I came home and got so flustered with the bobber! I made one burp cloth. Perhaps one day! I admire women who can sew!!! What a wonderful gift.
