Crock Pot Stuffed Pepper Soup

I LOVE my crock pot so I’m always up for a new recipe for it!  Janelle writes:
Stuffed Pepper Soup tastes like the “real” thing…it is so simple, yet SO satisfying. A meal in itself! Leftovers are just as good…or you can take some over to your neighbor.


Crushed tomatoes, tomato sauce, green peppers, red peppers, vegetable and beef broth, rice (ground beef and seasoning not shown).

Brown ground beef in a large skillet and drain.

Add all ingredients and seasonings into a crock pot and cook on high for 4 hours. You simply add uncooked rice, and it will cook inside the broth! So easy.

A wonderful soup for a chilly winter day. It smelled just like stuffed peppers in my home!

Stuffed Pepper Soup (crock pot)
Prep time: 20 mins
Cook time: 4 hours
Total time: 4 hours 20 mins
Serves: 8
Ingredients
  • 4 cups vegetable broth
  • 4 cups beef broth
  • 2 lbs ground beef
  • 1 28 oz can tomato sauce
  • 1 28 oz can crushed tomatoes
  • 1 cup uncooked rice
  • 2 green peppers (diced)
  • 2 red peppers (diced)
  • 1/4 cup sugar
  • 1 1/2 tsp salt
  • 1 tsp ground pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
Instructions
  1. In a large skillet brown ground beef.
  2. When done, drain ground beef in colander.
  3. In a crock pot add all ingredients – rice will cook in soup.
  4. Set on high for 4 hours.

  2. This soup is a favorite in my house so just a few tips. You can substitute the ground beef for ground turkey or ground venison and it is just as yummy! Also, this soup freezes really well! If you have leftovers and would like to save it for another meal down the road, place in a freezer bag or container, label it and when you are ready to use it again, put it in your crock pot on low for 8+ hours. You can also, let it thaw some in your fridge the night before and place it in your crock pot the next morning. Easy peasy! 🙂

    1. Oh and one more thing, if you don’t have broth that’s ok! I have in a pinch used water with some bouillon cubes and it works out just fine.

  7. I have this in the crock pot right now! So excited to try it tonight. However, I thought I had a large crock pot but mine still must not be as big as yours. I had a little spillage over the sides once I put my lid on! Oh well! 🙂

  8. I made this and the soup never thickened. The only thing I did differently was use brown rice over jasmine rice. Help!!!

  9. I made this today and it was delicious! I did however half it and instead of diced tomatoes i just pureed a can and put it in. I also used quinoa instead of rice-delish!

  10. I am making this Sunday as I have started a tradition with my family to have “Soup Sunday”. I am wondering if it can be cooked on low 8+ hours. I like to let my crock pot things cook overnight.

  11. I do not have vegetable broth but do have extra beef broth. Will that really effect the outcome or taste ? I made it before with both types and it was a HUGE hit. Don’t want to disappoint the 2 time around.
