Low-Country Boil

I love it when an entire meal can be made in ONE pot!  Janelle from Comfy In the Kitchen is bringing us some southern cooking today!

I love this recipe because it’s delicious, easy, my entire family gobbled it up, it’s decently healthy, and gluten-free! We had this tonight and I will most definitely be making it again! LOVED it! Just LOVED it !

Fill stock pot 3/4 of the way with water {about 10 cups for me} , add 1/4 cup of Old Bay seasoning, turn on high heat and bring to a rapid boil.

Yes, Old Bay is Gluten-Free!

4 bi-color corn on the cobs, 1 1/2 lbs baby red potatoes, 1 package Hillshire Farms smoked sausage, and 1 1/2 pounds raw shrimp.

Rinse potatoes and add them whole to the boiling water first…boil for 15 mins.

If your shrimp is frozen- no worries. Just place in a colander and rinse with luke warm water for a couple mins. Shrimp thaws and cooks quickly!

Slice sausage into coin sized slices. Rinse and break corn into halves.

After potatoes boil for 15 mins, throw everything else in the pot and let it boil for another 6-7 mins.

When it’s all done, ladle it out into a large lasagna pan. I put a little butter on the corn and sprinkled it with some sea salt.

Mmmmm!!!! This really was such a delicious meal and SO easy. If you can boil water, you can make it. My children are huge shrimp fans- they even like “peel and eat” {pictured above}. I cut open their potatoes and put a little ketchup on top- their plates were empty in 5 mins flat.

Ingredients
  • 10 cups water
  • ¼ cup Old Bay seasoning
  • 1½ lbs redskins
  • 1 pkg Hillshire Farms Smoked Sausage
  • 4 bi-colored corn on the cobs, halved
  • 1½ lbs raw shrimp
  • sea salt, butter, ketchup {optional}
Instructions
  1. Bring water and Old Bay to a boil.
  2. Rinse redskins and place them in whole- let boil for 15 mins.
  3. Cut sausage into coin sized slices, rinse shrimp, rinse corn and break in half- throw it all in the pot and let boil for 6-7 mins longer.
  4. Ladle out into a lasagna pan and sprinkle with sea salt. Butter corn if desired…kiddos may want some ketchup on their potatoes.
  5. Enjoy this simple yet wonderful dish!
