Here is my very favorite salad dressing that we have been using for years and no one gets tired of it! I have even had people tell me they could drink it! 🙂

{Kathy} My favorite salad: mixed greens, cold blanched green beans, cooked cold small potatoes, shallots, cherry tomatoes, goat cheese sprinkles and an olive oil/red wine vinegar/dijon mustard vinaigrette. Cold and delicious. It tastes good with everything from pizza to Thanksgiving Dinner.

Just a comment, for those who have to eat Gluten-Free. Strawberry Pretzel salad was always a staple in our home especially during the summer! When my husband was diagnosed with Celiac Disease, it was one of those things I stopped making. GF pretzels are now so good, if you substitute them for the normal pretzels, this salad is totally GF! Just a hint…you may need a little bit more melted butter to get them to stick together. Thank you for sharing!!
I love making what I call a Summer Macaroni Salad. I make a basic macaroni salad, but I add cucumbers, green peppers, tomatoes, broccoli, cauliflower, and boiled eggs. Then I whip up my own dressing, which consists of apple cider vinegar, mayo, and a bit of sugar. Mix that all together, and then pour it over the macaroni, cheese, and all the other ingredients listed above. — love it!!!!!!!!!!!!!!!!!

My husband’s work colleague is from the Ukraine and brought in this Russian salad for him to try.
So tasty! For vegetarians just leave out the bologna (like ham).

All these salads look great – it’s cold here in Australia at the moment so we are loving a roast vegetable and pasta salad.
Just roast veggies (including some unpeeled garlic – it goes so sweet) and add them to cooked penne, toss in a handful of rocket (arugula) and crumble in some feta. Dress with olive oil, balsamic vinegar, salt and pepper. Yum!
