Janelle from Comfy in the Kitchen is back with a breakfast bagel egg sandwich recipe!

Janelle writes:

The other day I shared on my personal FB page that I had made “Eggs in a Nest” for the kiddos. One of my friends mentioned that she made the same thing, but with bagels! By golly-how convenient- they already have holes! So, I had to try it her way. I added some cream cheese to the top half of the bagel and made them into sandwiches. Needless to say, they were a hit.

Seriously. So good.

(GF option: Use  Udi’s GF bagels.)

Start off by heating a skillet on medium-high heat.  Melt butter and place both side of your bagels onto the skillet.  Crack an egg and place it in the bottom halves of each bagel. Let cook for approximately 2 minutes. Add salt and pepper. Flip.

Let cook on the other side until done.

  1. My favorite meal is a late breakfast, most often some form of eggs. Can’t wait to try this new twist on an egg sandwich. Everything tastes better on a bagel in my book, why not eggs and cream cheese together? Thank you for sharing. And thank you for your time and effort in this ministry. God has blessed you greatly to be a blessing to others.

  2. Courtney, while I absolutely love your site and have gleaned many, many important lessons from it, I’ve found myself really disturbed by the recipes you’ve been posting on here. Our body is a temple for the Holy Spirit. We should feed it well and not take our responsibility to build a beautiful temple lightly. The recipes you’ve been posting are extremely unhealthy and the message I’m hearing is that we should reward ourselves with “good” food, but we are not dogs. We do not food treats as rewards. Furthermore, processed foods are what’s making us as a nation unhealthy and fat. I urge you to please reconsider some of the recipes you’ve been posting on here. It does not cost a lot of money to feed yourself all natural and healthy foods. It does not take long to educate yourself on what is healthy and what is not. Please, please stop telling people it’s OK for Christians to consume processed foods.

    1. It is impossible to please everyone Mandy – there are just so many dietary rules everyone has – such as low-fat, low calorie, no carbs, vegetarian (no meat), no preservatives, gluten free, peanut free, dye free, no caffeine, no chemicals, no alcohol, no pasta, no dairy, no sugar, organic only, no oils, no pork, no red meat, no shell fish, no using a microwave, no using foil, no using tupperware and guess where this leaves me…with NO recipes. Lol!

So here’s the rules we apply in our house – moderation and exercise.

      1. This sounds delicious, Courtney, and thank you for all that you do concerning both your religious posts and your food posts. I am so sorry some people are so negative on here. You are obviously doing something right because you look great!

  3. My favorite bagel with egg sandwich goes like this. Toast a blueberry bagel. Top it with a slice of cheese and hot scrambled eggs. Mmmm. Haven’t had dinner yet, maybe I’ll be making this easy recipe.
