2. I Used Chocolate Chip Cookie dough ice cream – take it out of the freezer to soften while the cookies cool.

3. Scoop one scoop of ice cream onto one cookie – press another on top to make a sandwich

4. Dip it into sprinkles for an extra treat

5. Wrap each cookie in saran wrap.

6. Freeze for an hour or two and serve!

Enjoy!

  1. these are the best! And, what a fun treat to have in your freezer for this warm weather we're finally having 🙂

  2. I tried something like that a couple years ago. They're really good!

You can also lay them down on a cookie sheet to freeze. After they're frozen, stick them in gallon sized freezer bags and store for up to several months!

  3. Ooo–those look amazing. My cookies don't ever seem "sturdy" enough to hold ice cream…maybe I need to rethink how I'm making them. 🙂

  4. Great idea, Courtney. I think my 14 year old would enjoy making these, and it's a great plan to have them on hand in the freezer. Stay cool. 🙂

  5. Yes, if you are like me – your family could eat a whole batch of chocolate chip cookies in one sitting!!! This way you can make a batch and eat some for dessert with dinner and save some for another day – by keeping them on hand as ice cream sandwiches in the freezer!
