Slice a sweet Vidalia onion into thin slices.
Mix water, white vinegar and sugar together.
Pour over cucumbers and onions and let marinate for at least 2 hours {you may make ahead of time in the morning}.

This is one of my FAVORITE recipes! Especially when the cukes are coming on and overwhelming me. Delish!!!
Thanks for sharing .
This recipe came to me many years ago from my grandmother (a grand Irish Lady) and my mother. It was often at the table especially when the cucumbers were in season. Thank you for sharing.
Thanks a bunch, I will try it. And I will have to go over to Janelle’s blog to try to find the creamy parmesan rice recipe.
My mother makes this when they have an abundance of cucumbers. She also freezes it and labelled them “freezer pickles”. (At the time she started making this, she would pickle cucumbers in jars, but no longer does that.) The one thing I do different is not peel the cucumbers. This not only saves time, but nutrients and fiber as well.
