Peppermint Bark and Janelle’s First Youtube Video!

Janelle from Comfy in the Kitchen is guest posting today – do not miss her first video blog at the bottom!!! Janelle writes:

“Every year, my son’s school sends out a letter to parents that asks for us to donate a dozen or two of our favorite cookies/treats on a given day. That morning children and parents come in with tons of cookies and lay them out on the stage in our gymnasium. Parent volunteers stay during the morning and lay out trays and disperse all of these goodies which eventually turn into beautiful Christmas cookie trays. Every staff member at our school gets to take one of these home. It is a small way we share God’s love with the people who touch our children’s lives each and every day.

This is something I brought in this year to place on the cookie trays..a very simple, pretty and tasty treat! I hope you enjoy it as much as I do…”

3 simple ingredients: white morsels, semi-sweet morsels, 2 boxes of candy canes

Place semi-sweet morsels in a microwave safe dish and microwave for 60 seconds and stir, microwave an additional 60 seconds and stir until smooth.

Spread melted chocolate onto a cookie sheet covered with parchment paper, place in refrigerator and let cool/harden. (appx 20 mins)

Unwrap candy canes and place in a large ziploc bag- crush with a mallet.

Crushed candy canes!

Melt white chocolate using the same method as you did with the semi-sweet chocolate. Stir in 1 cup of the crushed candy canes.

Spread white chocolate with crushed candy canes over the cooled semi-sweet chocolate

My “helper”

Sprinkle remaining crushed candy canes over top of white chocolate, place in refrigerator for 2 hours until well set, cooled and hardened.

Break into pieces (they will be uneven)

Mmmmmmm…..a beautiful and delicious winter treat!

I wrapped 3-4 pieces in baggies to take to my son’s school for the annual cookies trays we make for the staff.

Peppermint Bark

24 oz of white chocolate chips

24 oz semi-sweet chocolate chips

2 boxes of candy canes

In a microwave safe bowl melt semi-sweet chocolate chips in the microwave for 60 seconds, stir and repeat for an additional 60 seconds. Place parchment paper on top of a cookie sheet and spread melted chocolate over top. Place in refrigerator until set and hardened (appx 20 mins). Melt white chocolate chips the same way. Unwrap candy canes and place in a large Ziploc bag and crush with a mallet. Place 1 cup of crushed candy canes into the melted white chocolate. Pour white chocolate on top of hardened dark chocolate and sprinkle with the left over crushed candy cane. Place in refrigerator for 2 hours until well set and hardened. Take out and break into pieces. Enjoy!

Thank you Janelle so much!!!

  8. Bark is my absolute FAVORITE treat to make for sharing. I do the cheaters version, using a base of lightly salted saltine crackers, then a layer of melted margarine/sugar, and then either chocolate chips (melted and spread over the baked crackers) and peanuts, OR melted white chocolate and then crushed candy canes. Bark is always a HUGE hit. And it's addicting (uh hem). Thanks so much for sharing your video, Janelle. Wonderful!
    Blessings,
    Toni

  11. Thank you my Friends! It was such a fun day..loved sharing it with you (even though I am a bit camera shy!)The peppermint bark can be made so many different/delicious ways- a lot of the recipes I share don't involve purchasing anything special-sometimes 1 ingredient intimidates people enough that they don't make the item they want to make! Please feel free to add to my recipes as your tastes desire! I love it!

  18. Hi Stephanie!

It is funny you should mention Christmas morning breakfast because I am posting about that very topic on Courtney's blog tomorrow! what I would suggest would be to try the easy quiche recipe
and make pillsbury or rhodes cinnamon buns (I have made my own from scratch and they taste so similar, I figure it isn't worth all the fuss) you could also add some fruit and/or sausage gravy ahead of time ( keeping it warm in a Crockpot)

Both of these are EASY recipes-
    Sausage Gravy- http://comfynkitchen.blogspot.com/2010/11/sausage-gravy-over-biscuits.html
    Quiche- http://womenlivingwell-courtney.blogspot.com/2010/10/easy-ham-and-cheese-quiche.html

I have also made Paula Deens Praline Baked French Toast (you soak overnight and bake)- http://www.food.com/recipe/paula-deens-praline-french-toast-casserole-117106
And this egg and sausage casserole -http://allrecipes.com//Recipe/christmas-breakfast-sausage-casserole/Detail.aspx

Hope you have a wonderful Christmas! Love, Janelle

  19. Thanks for sharing your recipe. I made the bark today, and I love it. I accidentally purchased milk chocolate instead of semi-sweet, and it's still delicious. Can't wait to share it with my best friend. She loves peppermint.

  20. Oh I LOVE peppermint bark. I almost bought a box at Dillard’s yesterday. I’m so happy I found this post because now the girls and I will be making our own batch tomorrow! Thank you so much for sharing!
