Strawberry Spinach Salad with Homemade Poppyseed Dressing

Janelle from Comfy In The Kitchen has the perfect recipe for all of us who are working on eating healthier – a beautiful Strawberry Spinach Salad!  She writes:
This is one of  my all-time favorite salads! It tastes delicious, is absolutely beautiful, and can be doubled. I have actually quadrupled the recipe for church functions and have had many people ask to take “doggy bags” home because they enjoyed it so much :) 
Let me calm you..it is not scary to make your own dressing!!! I promise! Worcestershire sauce, olive oil, vinegar, sugar, onion, poppy seeds, sesame seeds (you may not have these- they are with the spices in the grocery store)
Whisk together- that is IT! Now you can breath..AHhhhhh…
I use pre-packaged baby spinach and just toss it in a nice bowl (I do not remove my stems), then add sliced strawberries and slivered almonds.
Toss with dressing and refrigerate until ready to serve! Isn’t this beautiful? Oh, I just love it.

 

Strawberry Spinach Salad
1 10oz bag of baby spinach (or appx 6 cups of leaves)
2 cups sliced strawberries (I use an entire plastic container)
1/2 cup slivered almonds

Dressing

1/2 cup olive oil
1/4 cup white vinegar
1/4 tsp worcestershire
1/4 cup sugar
2 Tbsp sesame seeds
1 Tbsp poppy seeds
1/4 cup minced white onion

Whisk all the dressing ingredients together.
Place clean spinach in a bowl and top with sliced strawberries and almonds.
Toss with dressing.

We are so blessed to have one another as Sisters in Christ…the internet is an amazing thing isn’t it? We can “meet” one another from across the globe and share our love for Christ with each other! Even in areas that are not predominately Christian, a person can “log on” and feel connected in fellowship. God is good.

Easter Egg Toast

 

Janelle, from Comfy In the Kitchen, has the perfect recipe that will use up all of our hard boiled Easter Eggs!!  She writes:

This recipe came with my hubby when I married him {hehe}. On our first Easter, he asked “So Hon, when are we going to have Easter Egg Toast?” Ladies…I had NO IDEA what he was talking about! So, I called my Mother-In-Law and asked her what this was all about. She laughed and said that it was a recipe she always had as a child and made it for her boys. It’s a great way to use up all of those hard boiled Easter Eggs! By golly…she was right.

Here it is….Easter Egg Toast.

 

Gather up about 10 Easter Eggs.

Take off the shells and rinse. You may have some “color” showing on the actual egg…I think it makes it more festive!

Chop up the eggs like so…

Now, you can either purchase a “gravy mix” {I was on vacation and had to bring this along-it was delicious, but I do typically make it myself} or you can make homemade gravy {white sauce}.

Add eggs to your gravy {white sauce}.

 

Stir.

Toast your bread {1-2 slices per person}

Pour over top! It really is a delicious way to use up those Easter Eggs!

Easter Egg Toast
Prep time: 5 mins
Cook time: 10 mins
Total time: 15 mins
Serves: 6-8
Ingredients
  • 10 Easter Eggs
  • White Gravy Packet {follow directions}
  • OR- Homemade= 4 Tbsp butter, 1/3 cup flour, 3 cups of milk, 1 tsp salt/pepper.
  • 1-2 slices of bread per person.
Instructions
  1. Peel shells off of Easter Eggs.
  2. Chop eggs.
  3. Make White Gravy Packet OR Make Homemade as follows:
  4. Melt butter on stove top, add flour to make a paste, add milk and whisk until thickened, add salt and pepper.
  5. Add chopped eggs.
  6. Toast bread.
  7. Pour egg and gravy over toast.

How To Make Bunny Cupcakes

Next week I plan to share some fun, spiritual Easter activities we can do with our children – but today I’m featuring Janelle from Comfy In the Kitchen and her adorable bunny cupcakes!

She writes“I found a photo of these cute cupcakes on the Betty Crocker website a few years ago. As soon as I saw them, I couldn’t wait to make them for an Easter play date we had scheduled! The children at the play date went crazy when they saw them! Ever since, I have made them every year around Easter. I give each of my children a cupcake, individual ingredients, and I show them step by step how to turn their ordinary cupcake into a cute little bunny…they have so much fun!”

Make cupcakes as directed on the box. This particular mix used eggs, oil, and water.
I chose Funfetti because of the colors. You can use any cake mix you like.
Place in 12 jumbo cupcake liners or 24 regular cupcake liners. Bake as directed. I baked mine for 18 mins at 350.
When cool, frost all cupcakes with pink frosting, then using white frosting, make a circle for the bunny face.
To make the ears, cut a marshmallow in half lengthwise and cut a slit 3/4 of the way down. Dip sticky side into pink sprinkles like so.
Place ears on top of cupcake
For the eyes I used decorators frosting. However, I have used sugar dots attached to paper in the past…I couldn’t find them this year. The frosting worked just fine.
A jelly bean nose
Twizzler Pull n Peels (you may use black if you wish) for the whiskers
No sneaking into those jellybeans! LOL!
Cut the Twizzlers into small pieces
Here you have it…a cute little bunny
